Adult Snack Board

Food as medicine highlight 

Adult snack boards are one of my FAVORITE lunches! Quick, easy, and allows for variety as well as incorporation of seasonal ingredients. There are so many ways to highlight food as medicine from the inclusion of olives for vitamin E, fiber, and monounsaturated fat to grass-fed raw aged cheeses which provide vitamin K2 and nuts like pistachios for minerals including copper, manganese, and phosphorus. For seasonal flares I love including homemade cranberry sauce on the board, local jams, and in-season fruits and vegetables such as berries, grapes, bell peppers, cucumbers, and carrots. See the ingredients below for essential elements for the perfect adult snack board. 

Ingredients 

  • Pick your protein: organic oven roasted turkey or chicken, uncured genoa salami, grass-fed beef stick, leftover protein from dinner, etc. 

  • Pick your fat: raw aged cheeses, olives, nuts (marcona almonds, pistachios, almonds, pecans, walnuts, etc.), seeds, nut butters, guacamole, etc. 

  • Pick your fruits/veggies: so many options here! I like to go with whatever is in season. For example, in the summer my go-to’s would be local berries and cucumber, whereas in the fall I’d reach for apples and broccoli 

  • Pick your condiments/therapeutic add-ons: local honey, jam, homemade cranberry sauce, spicy mustard, fermented vegetables like sauerkraut, pickles, dark chocolate, rosemary almond flour crackers, etc. 

My favorite snack board to make

  • 2-3 slices organic oven roasted turkey

  • 2-3 small handfuls arugula 

  • 5-8 castelvetrano olives 

  • 1-2 oz pistachios

  • 1 oz raw aged cheese (such as Kerrygold)  

  • 1 tbsp spicy mustard 

  • 1 tbsp local jam 

  • Pickles 

Directions 

  1. Lay turkey slices flat and add arugula to the center. Roll turkey slices up. 

  2. Assemble board with turkey roll-ups, olives, pistachios, cheese, and pickles. 

  3. Add local jam and mustard to the board (I love dipping my turkey roll-ups in mustard and my cheese in the jam) 

  4. Enjoy!
