The BEST Egg Salad Recipe

Pastured eggs are one of my favorite proteins. Rich in choline and B-vitamins, eggs are a nutrition powerhouse that support energy production, metabolism, cognitive health, and red blood cell production. Pastured eggs also contain higher amounts of vitamin A, omega-3 fatty acids, and vitamin E compared to conventional eggs. Visit your local Farmer’s Market and purchase local, pastured eggs for optimal nutrient density. You will know your eggs are of great quality by the rich, orange hue of the yolk. This egg salad recipe is one of my go-to easy lunches. Hope you enjoy it! 

Ingredients 

  • 3 pastured eggs, hard boiled 

  • 2 tbsp avocado oil mayo

  • 5-6 bread & butter pickles (I like Bubbies brand) 

  • Salt & pepper to taste 

  • 2 cups organic arugula 

Directions 

  1. Dice pickles and set aside. 

  2. Chop hard boiled eggs in a bowl. Add in avocado oil mayo and mix to combine. 

  3. Stir in diced pickles. Add salt & pepper to taste. 

  4. Serve over arugula. Optional: enjoy with Simple Mills Rosemary Crackers.
