Chewy Flourless Chocolate Cookies

Traditional cookies are made with refined white sugar and flour - two ingredients that are not so good for overall health! If you enjoy cookies like I do, you may be looking for a better alternative. You would never know that these chewy chocolate cookies don’t contain any flour! The primary ingredient is almond butter which contains healthy monounsaturated fats, vitamin E, and fiber. Hope you enjoy!

Ingredients

  • 1 cup almond butter (only ingredients should be almonds and salt)

  • 1/2 cup coconut sugar

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda

  • 1 tablespoon cacao powder

  • 2 pastured eggs

  • Maldon sea salt flakes for topping

Directions

  1. Preheat oven to 375℉ and line a baking sheet with parchment paper.

  2. In a mixing bowl, cream together almond butter and coconut sugar.

  3. Blend in eggs and vanilla.

  4. Add cacao powder and baking soda. Stir to combine.

  5. Form cookie dough into 1 tablespoon size balls and place on baking sheet.

  6. Sprinkle on flakes of sea salt.

  7. Bake for approximately 8 minutes. Do not over-bake as this will make the cookies dry!
