Chocolate Coconut Cardamom Energy Bites

This recipe features warming, phytonutrient-rich spices like cardamom and ceylon cinnamon, plenty of fiber thanks to the raw nuts and flax meal, and healthy fats from the nuts, flax, and coconut. These chocolate coconut cardamom energy bites are the perfect snack for when you’re craving something sweet, but want to keep blood sugar in check as the recipe features protein and fat to support a more balanced blood sugar response. Natural sweetness comes from medjool dates which also provides antioxidants and additional fiber. Enjoy!

Ingredients

  • 1 cup raw almonds

  • 1/2 cup raw cashews

  • 2 tbsp flax meal

  • 2 tbsp unsweetened coconut flakes (plus more for coating the energy bites)

  • 1 tbsp cacao powder

  • 1 tsp ceylon cinnamon

  • 1/2-3/4 tsp cardamom

  • 2 tsp almond extract

  • 5 medjool dates, pitted

  • 6 tbsp filtered water

  • Pinch of salt

Directions

  1. Place all ingredients in a food processer (except for water) and process until a smooth, dough-like consistency is formed, adding water tablespoon by tablespoon as needed.

  2. Form dough into balls and roll in coconut flakes.

  3. Refrigerate bites for at least 30 minutes prior to enjoying. Store in the refrigerator and enjoy as a nutrient-packed snack!
